- 1 cup all-purpose flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 apple, peeled and diced
- Mix flour, sugar, baking powder, cinnamon, and salt in a bowl.
- In another bowl, whisk milk, egg, and melted butter.
- Pour wet ingredients into dry. Stir until just combined.
- Fold in diced apple.
- Heat a non-stick pan over medium heat. Lightly grease.
- Pour 1/4 cup batter for each pancake.
- Cook until bubbles form on surface. Flip and cook 1-2 minutes.
- Serve warm with maple syrup.
Notes
- Use a sweet apple like Fuji or Honeycrisp.
- Do not overmix the batter. Lumps are okay.
- Keep pancakes warm in a low oven while cooking the rest.
