2 cups graham cracker crumbs
1/2 cup melted butter
1/4 cup granulated sugar
24 oz cream cheese, softened
3/4 cup granulated sugar
3 large eggs
1 tsp vanilla extract
1/2 cup sour cream
4 cups peeled and sliced apples
2 tbsp butter
1/2 cup brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
1 tbsp lemon juice
Instructions
Preheat oven to 325°F. Mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into bottom of a 9-inch springform pan. Bake for 10 minutes. Cool.
Beat cream cheese and 3/4 cup sugar until smooth. Add eggs one at a time, then vanilla and sour cream. Pour over crust.
In a skillet, melt 2 tbsp butter. Add apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook until apples soften. Spread over cheesecake batter.
Place pan in a water bath. Bake for 60 minutes or until center is set. Turn off oven and let cheesecake cool inside with door ajar.
Refrigerate for at least 4 hours before serving.
Notes
Use room temperature cream cheese for a smooth batter.
