  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup apple pie filling, chopped into small pieces
  • For the frosting: 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F. Line a 12-cup muffin tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In a separate large bowl, beat butter and both sugars until light and fluffy. Add eggs one at a time, then mix in vanilla.
  4. Alternate adding the dry ingredients and buttermilk to the butter mixture, starting and ending with dry. Mix just until combined.
  5. Fill each cupcake liner halfway with batter. Spoon 1 tablespoon of chopped apple pie filling into the center. Top with remaining batter to cover.
  6. Bake for 18-20 minutes, until a toothpick inserted into the cake part comes out clean. Cool completely.
  7. For the frosting: Beat butter until creamy. Gradually add powdered sugar, vanilla, cinnamon, and milk. Beat until smooth. Pipe or spread onto cooled cupcakes.

  • You can use store-bought or homemade apple pie filling.
  • For extra apple flavor, add 1/2 cup finely diced fresh apple to the batter.
