  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 medium apple (such as Granny Smith), peeled and finely chopped
  • For coating: 2 tablespoons granulated sugar mixed with 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking soda, cream of tartar, salt, and cinnamon.
  5. Gradually add dry ingredients to wet mixture, stirring just until combined.
  6. Fold in chopped apple until evenly distributed.
  7. Roll dough into 1-inch balls. Roll each ball in the cinnamon-sugar coating.
  8. Place balls 2 inches apart on prepared baking sheet.
  9. Bake for 10 to 12 minutes, until edges are set and lightly golden.
  10. Let cookies cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • You can use any firm apple variety. Granny Smith adds tartness.
  • Chill dough for 30 minutes if too sticky to handle.
