2 3/4 cups all-purpose flour
1/2 teaspoon cream of tartar
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup finely chopped apple, peeled and cored
For rolling: 1/4 cup granulated sugar and 1 tablespoon ground cinnamon
Instructions
Preheat your oven to 375°F. Line baking sheets with parchment paper.
Mix the flour, cream of tartar, baking soda, salt, and 1 teaspoon cinnamon in a bowl.
Cream the butter and 1 1/2 cups sugar in a large bowl until light and fluffy.
Beat in the eggs one at a time. Add the vanilla.
Stir in the chopped apple.
Gradually add the dry ingredients to the wet mixture. Mix until just combined.
Chill the dough for 30 minutes.
Combine the 1/4 cup sugar and 1 tablespoon cinnamon in a small bowl.
Roll the dough into 1-inch balls. Coat each ball in the cinnamon sugar.
Place the balls 2 inches apart on the prepared sheets.
Bake for 10 to 12 minutes, until the edges are set.
Cool on the sheets for 5 minutes. Transfer to a wire rack to cool completely.
Notes
Use a firm apple like Granny Smith for the best texture.
Chill the dough to prevent spread.
Store the cookies in an airtight container for up to 3 days.
