A moist and tender cake made with fresh apples and yogurt. Simple to prepare and perfect for a light dessert or snack.

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup plain yogurt
  • 2 medium apples, peeled and diced

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.
  4. Mix in the yogurt until combined.
  5. Fold in the dry ingredients until just moistened. Gently fold in the diced apples.
  6. Pour batter into the prepared pan. Bake for 35-40 minutes, until a toothpick inserted in the center comes out clean.
  7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • You can use any apple variety, such as Granny Smith or Fuji.
  • Serve plain or dusted with powdered sugar.
