1 small onion, diced
2 cloves garlic, minced
3 cups butternut squash, cubed
4 cups vegetable broth
1 can (14.5 oz) diced tomatoes
1 teaspoon dried sage
1/2 teaspoon salt
1/4 teaspoon black pepper
9 ounces cheese tortellini (fresh or frozen)
2 cups fresh spinach
1/4 cup grated Parmesan cheese (optional)
Instructions
Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 4 minutes.
Add garlic and cook for 1 minute.
Stir in butternut squash, broth, diced tomatoes, sage, salt, and pepper. Bring to a boil.
Reduce heat and simmer until squash is tender, about 10 minutes.
Add tortellini and cook according to package directions (usually 5-7 minutes).
