These baked apple cider donuts are soft, spiced, and full of apple flavor. They are easy to make and perfect for fall.

Ingredients

Scale
  • 1 cup apple cider
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/4 cup melted unsalted butter
  • 1 teaspoon vanilla extract
  • For coating: 1/4 cup melted butter, 1/2 cup granulated sugar mixed with 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 375°F. Grease a donut pan.
  2. In a small saucepan, simmer the apple cider over medium heat until reduced to 1/2 cup, about 10 minutes. Let cool.
  3. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In a separate bowl, whisk eggs, melted butter, vanilla, and the cooled reduced cider.
  5. Pour the wet ingredients into the dry. Stir until just combined. Do not overmix.
  6. Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full.
  7. Bake for 10 to 12 minutes, until a toothpick inserted comes out clean.
  8. Let cool in pan for 2 minutes, then transfer to a wire rack.
  9. While warm, brush each donut with melted butter and dip into the cinnamon-sugar mixture.

Notes

  • Use fresh apple cider for best flavor.
  • You can skip the coating for a less sweet donut.
  • Store leftovers in an airtight container for up to 2 days.
