4 boneless, skinless chicken breasts (about 6 oz each)
1 cup breadcrumbs (regular or panko)
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
2 large eggs, beaten
1 cup marinara sauce
1 cup shredded mozzarella cheese
2 tablespoons olive oil (for greasing)
Instructions
Preheat your oven to 400°F (200°C). Grease a baking sheet with olive oil.
In a shallow bowl, mix breadcrumbs, Parmesan, garlic powder, oregano, salt, and pepper.
Dip each chicken breast into the beaten eggs, then coat with the breadcrumb mixture. Press firmly to adhere.
Place the breaded chicken on the prepared baking sheet. Bake for 20 minutes, flipping halfway through.
Remove from oven. Spoon marinara sauce over each chicken breast, then sprinkle with mozzarella.
Return to the oven and bake for another 10-15 minutes, until cheese is melted and bubbly. Chicken should reach an internal temperature of 165°F.
Let rest for 5 minutes before serving.
Notes
Use fresh mozzarella for a creamier texture.
For extra crispiness, spray the breaded chicken with cooking spray before baking.
