These baked pumpkin fritter bites are a healthier alternative to fried fritters. They are soft, slightly sweet, and perfect for fall.

Ingredients

  • 1 cup pumpkin puree
  • 1 large egg
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 2 tablespoons melted coconut oil

Instructions

  1. Preheat your oven to 375°F. Line a baking sheet with parchment paper.
  2. In a large bowl, mix pumpkin puree, egg, brown sugar, vanilla, and melted coconut oil until smooth.
  3. In a separate bowl, whisk flour, baking powder, pumpkin pie spice, and salt.
  4. Add dry ingredients to wet ingredients. Stir until just combined. Do not overmix.
  5. Scoop tablespoon-sized rounds of batter onto the prepared baking sheet. Leave space between each.
  6. Bake for 12 to 15 minutes, until edges are golden and centers are set.
  7. Let cool on the baking sheet for 2 minutes, then transfer to a wire rack.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • You can substitute white whole wheat flour for all-purpose flour.
  • These bites freeze well. Reheat in a toaster oven.
