- 1 pound elbow macaroni
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1 cup pumpkin puree
- 2 cups shredded white cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/2 cup panko breadcrumbs
- Preheat your oven to 375°F.
- Cook macaroni according to package directions. Drain and set aside.
- In a large saucepan, melt butter over medium heat.
- Whisk in flour and cook for 1 minute.
- Slowly whisk in milk and pumpkin puree. Cook until thickened, about 3 minutes.
- Remove from heat. Stir in white cheddar, salt, pepper, and nutmeg until cheese melts.
- Combine sauce with cooked macaroni. Pour into a greased 9×13 baking dish.
- Sprinkle panko breadcrumbs on top.
- Bake for 20 minutes, until bubbly and golden.
Notes
- You can use any small pasta shape.
- Add a pinch of cayenne for heat.
