Baked White Cheddar Pumpkin Mac & Cheese

A creamy mac and cheese with pumpkin and white cheddar, baked until golden.

Ingredients

  • 1 pound elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1 cup pumpkin puree
  • 2 cups shredded white cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/2 cup panko breadcrumbs

Instructions

  1. Preheat your oven to 375°F.
  2. Cook macaroni according to package directions. Drain and set aside.
  3. In a large saucepan, melt butter over medium heat.
  4. Whisk in flour and cook for 1 minute.
  5. Slowly whisk in milk and pumpkin puree. Cook until thickened, about 3 minutes.
  6. Remove from heat. Stir in white cheddar, salt, pepper, and nutmeg until cheese melts.
  7. Combine sauce with cooked macaroni. Pour into a greased 9×13 baking dish.
  8. Sprinkle panko breadcrumbs on top.
  9. Bake for 20 minutes, until bubbly and golden.

Notes

  • You can use any small pasta shape.
  • Add a pinch of cayenne for heat.
