- 1 cup barley
- 2 carrots, chopped
- 1 parsnip, chopped
- 1 turnip, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add carrots, parsnip, and turnip, cook for 5 minutes.
- Stir in barley and thyme, cook for another 2 minutes.
