Ingredients

  • 1 cup barley
  • 2 carrots, chopped
  • 1 parsnip, chopped
  • 1 turnip, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add carrots, parsnip, and turnip, cook for 5 minutes.
  4. Stir in barley and thyme, cook for another 2 minutes.
  5. Pour in vegetable broth, bring to a boil.
  6. Reduce heat, cover, and simmer for 45 minutes or until barley is tender.
  7. Season with salt and pepper.
  8. Serve hot.
