- 2 cups shredded cooked chicken
- 1/2 cup BBQ sauce
- 4 large flour tortillas
- 2 cups shredded cheese (cheddar or Monterey Jack)
- 1/4 cup diced red onion
- 2 tbsp chopped cilantro
- 1 tbsp oil for cooking
- Mix shredded chicken with BBQ sauce in a bowl.
- Heat oil in a skillet over medium heat.
- Place one tortilla in the skillet.
- Spread half the cheese on the tortilla.
- Add half the BBQ chicken mixture, red onion, and cilantro.
- Top with remaining cheese.
- Place another tortilla on top.
- Cook until golden brown, then flip and cook the other side.
- Repeat for the second quesadilla.
- Cut into wedges and serve.
