A creamy and tangy pasta salad with BBQ flavors and ranch dressing.

Ingredients

  • 12 oz pasta (rotini or penne)
  • 1 cup BBQ sauce
  • 1/2 cup ranch dressing
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper
  • 1/2 cup corn kernels
  • 1/2 cup black beans (drained and rinsed)
  • 1/2 cup chopped cilantro
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, mix BBQ sauce and ranch dressing.
  3. Add the cooked pasta to the bowl and toss to coat.
  4. Stir in cheddar cheese, red onion, bell pepper, corn, and black beans.
  5. Season with salt and pepper.
  6. Chill for at least 1 hour before serving.
