A hearty soup with tender beef, vegetables, and barley. This one-pot meal is filling and simple to make.

Ingredients

  • 1 pound beef stew meat, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 8 cups beef broth
  • 1 cup pearl barley
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add beef cubes and brown on all sides. Remove beef and set aside.
  2. Add onion, carrots, and celery to the pot. Cook for 5 minutes until softened. Add garlic and cook 1 minute.
  3. Return beef to the pot. Add beef broth, barley, bay leaf, and thyme. Bring to a boil.
  4. Reduce heat to low. Cover and simmer for 45 minutes, or until beef and barley are tender.
  5. Remove bay leaf. Season with salt and pepper. Stir in parsley before serving.

Notes

  • You can use any cut of beef suitable for stewing, like chuck or round.
  • For a thicker soup, add an extra 1/4 cup barley.
  • Store leftovers in the fridge for up to 4 days.
