  • 2 teaspoons pumpkin pie spice
  • 1/2 cup canned pumpkin puree
  • 1/2 cup unsweetened applesauce
  • 1/3 cup honey or maple syrup
  • 2 large eggs
  • 1/4 cup melted coconut oil or vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F. Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice.
  3. In a separate bowl, mix the pumpkin puree, applesauce, honey, eggs, oil, and vanilla until smooth.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix.
  5. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  6. Bake for 18 to 20 minutes, until a toothpick inserted in the center comes out clean.
  7. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
