This pumpkin bread recipe is moist, spiced, and tastes better than the Starbucks version. You can make it easily at home with simple ingredients.

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1/3 cup water
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  3. In another bowl, beat together granulated sugar, brown sugar, and oil until smooth.
  4. Add eggs one at a time, beating well after each addition.
  5. Stir in pumpkin puree, water, and vanilla extract until combined.
  6. Pour the wet ingredients into the dry ingredients. Stir just until moistened. Do not overmix.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool in the pan for 10 minutes, then remove to a wire rack to cool completely.

Notes

  • You can substitute 1/2 cup of applesauce for the oil to reduce fat.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • This bread freezes well. Wrap tightly and freeze for up to 3 months.
