A hearty soup with all the flavors of stuffed cabbage rolls, without the rolling. This one-pot meal is comforting and easy to make.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef (or turkey/plant-based)
  • 1 head green cabbage, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 4 cups beef or vegetable broth
  • 1 cup cooked rice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until soft.
  2. Add ground beef, cook until browned. Drain excess fat if needed.
  3. Stir in chopped cabbage, diced tomatoes, tomato sauce, and broth. Bring to a boil.
  4. Add rice, salt, pepper, paprika, and bay leaf. Reduce heat and simmer for 30 minutes.
  5. Remove bay leaf. Taste and adjust seasoning. Serve hot.

Notes

  • You can use leftover cooked rice or add uncooked rice with extra broth. Adjust cooking time.
  • For a vegetarian version, use plant-based meat and vegetable broth.
  • Soup thickens as it sits. Add more broth to thin if needed.
