1 head romaine lettuce, chopped
1 medium delicata squash, seeded and sliced into half-moons
2 tablespoons olive oil (for squash)
1/4 cup grated Parmesan cheese
2 anchovy fillets
1 clove garlic, minced
2 tablespoons lemon juice
1 teaspoon Dijon mustard
1/3 cup olive oil (for dressing)
Salt and black pepper to taste
Instructions
Preheat oven to 400°F.
Toss squash slices with 2 tablespoons olive oil, salt, and pepper. Spread on a baking sheet.
Roast for 20 minutes, flipping halfway, until golden and tender.
While squash roasts, make dressing: mash anchovies and garlic into a paste. Whisk in lemon juice and mustard. Slowly drizzle in 1/3 cup olive oil, whisking constantly. Season with salt and pepper.
In a large bowl, combine romaine, roasted squash, and Parmesan. Pour dressing over and toss well.
Serve immediately.
Notes
Delicata squash skin is edible when roasted.
For a vegetarian version, replace anchovies with 1 tablespoon capers.
