Caesar Salad with Delicata Squash Croutons

A twist on classic Caesar salad with roasted delicata squash croutons.

Ingredients

  • 1 head romaine lettuce, chopped
  • 1 medium delicata squash, seeded and sliced into half-moons
  • 2 tablespoons olive oil (for squash)
  • 1/4 cup grated Parmesan cheese
  • 2 anchovy fillets
  • 1 clove garlic, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1/3 cup olive oil (for dressing)
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F.
  2. Toss squash slices with 2 tablespoons olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast for 20 minutes, flipping halfway, until golden and tender.
  4. While squash roasts, make dressing: mash anchovies and garlic into a paste. Whisk in lemon juice and mustard. Slowly drizzle in 1/3 cup olive oil, whisking constantly. Season with salt and pepper.
  5. In a large bowl, combine romaine, roasted squash, and Parmesan. Pour dressing over and toss well.
  6. Serve immediately.

Notes

  • Delicata squash skin is edible when roasted.
  • For a vegetarian version, replace anchovies with 1 tablespoon capers.
