Carrot Cake Cinnamon Rolls

Soft cinnamon rolls filled with carrot cake flavor and topped with cream cheese frosting.

Ingredients

  • 2.5 cups all-purpose flour
  • 1 packet active dry yeast
  • 0.5 cup warm milk
  • 0.25 cup granulated sugar
  • 0.25 cup unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 0.5 tsp salt
  • 1 cup finely grated carrots
  • 0.5 cup brown sugar
  • 2 tsp ground cinnamon
  • 0.25 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 tbsp milk

Instructions

  1. Combine flour, yeast, warm milk, granulated sugar, melted butter, egg, vanilla, and salt. Mix into a dough. Knead for 5 minutes.
  2. Cover and let rise for 1 hour until doubled.
  3. Mix brown sugar and cinnamon for filling. Roll dough into a 12×18 inch rectangle. Spread softened butter, then sprinkle cinnamon mixture and grated carrots.
  4. Roll tightly from the long side. Cut into 12 equal rolls.
  5. Place in a greased 9×13 inch pan. Cover and let rise for 30 minutes.
  6. Bake at 350°F for 20-25 minutes until golden.
  7. Mix cream cheese, powdered sugar, and milk until smooth. Spread over warm rolls.

Notes

  • Use room temperature cream cheese for a smooth frosting.
  • You can add raisins or nuts to the filling.
  • Store leftovers in the fridge.
