- 2 pounds mixed root vegetables (potatoes, carrots, parsnips), peeled and thinly sliced
- 2 cups heavy cream
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1 1/2 cups shredded Gruyere cheese
- 1/2 cup grated Parmesan cheese
- Preheat your oven to 375°F.
- In a saucepan, heat cream, garlic, salt, pepper, and thyme over medium heat until warm. Do not boil.
- Layer half of the sliced vegetables in a greased 9×13 inch baking dish.
- Pour half of the warm cream mixture over the vegetables.
- Sprinkle half of the Gruyere and Parmesan cheese on top.
- Repeat with remaining vegetables, cream, and cheeses.
- Cover with foil and bake for 40 minutes.
- Remove foil and bake for 20 more minutes until golden and bubbly.
- Let it rest for 10 minutes before serving.
Notes
- You can substitute other root vegetables like turnips or celery root.
- Use a mandoline for even slices.
- Let the gratin rest to set before cutting.
