- 2 lbs chicken breast, cubed
- 4 cups chicken broth
- 1 lb tomatillos, husked and chopped
- 2 poblano peppers, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- 2 tbsp olive oil
- Heat olive oil in a large pot over medium heat.
- Add chicken and cook until browned, about 5 minutes.
- Remove chicken and set aside.
- Add onion, garlic, and poblano peppers to the pot. Cook until softened.
- Stir in tomatillos, cumin, oregano, salt, and pepper.
- Return chicken to the pot and add chicken broth.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Serve hot.
