A hearty stew featuring tender chicken and green chiles in a savory broth.

Ingredients

  • 2 lbs chicken breast, cubed
  • 4 cups chicken broth
  • 1 lb tomatillos, husked and chopped
  • 2 poblano peppers, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned, about 5 minutes.
  3. Remove chicken and set aside.
  4. Add onion, garlic, and poblano peppers to the pot. Cook until softened.
  5. Stir in tomatillos, cumin, oregano, salt, and pepper.
  6. Return chicken to the pot and add chicken broth.
  7. Bring to a boil, then reduce heat and simmer for 30 minutes.
  8. Serve hot.

Notes

  • For a spicier stew, add jalapeños.
  • Serve with warm tortillas or rice.
  • Garnish with cilantro and lime wedges.
