A warm and comforting chicken noodle soup. It is simple to make and perfect for cold days.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add egg noodles and cook for 8 minutes, or until tender.
  6. Stir in shredded chicken and thyme. Simmer for 5 minutes.
  7. Season with salt and pepper.
  8. Serve hot, garnished with parsley.

Notes

  • Use leftover chicken or a rotisserie chicken for convenience.
  • Substitute egg noodles with gluten-free pasta if needed.
  • Store leftovers in the fridge for up to 3 days.
