A simple chicken noodle soup made with tender chicken, vegetables, and egg noodles in a savory broth. Perfect for cold days.

Ingredients

  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add chicken, egg noodles, and thyme. Reduce heat and simmer for 10 minutes until noodles are tender.
  6. Season with salt and pepper. Serve hot with parsley.
