- 2 lbs sweet potatoes, peeled and thinly sliced
- 1 cup heavy cream
- 1/2 cup milk
- 2 chipotle peppers in adobo sauce, minced
- 1 tsp adobo sauce
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups shredded gouda cheese
- 1/4 cup chopped fresh cilantro (optional)
- Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- In a saucepan, combine heavy cream, milk, chipotle peppers, adobo sauce, garlic, salt, and pepper. Heat over medium heat until warm.
- Layer half the sweet potato slices in the baking dish. Pour half the cream mixture over them. Sprinkle with half the gouda cheese.
- Repeat with remaining sweet potatoes, cream mixture, and cheese.
- Cover with foil and bake for 40 minutes. Remove foil and bake for 20 more minutes until potatoes are tender and top is golden.
- Let cool for 5 minutes. Garnish with cilantro if desired.
Notes
- You can adjust chipotle amount for more or less heat.
- Use a mandoline for even slices.
- Gouda melts well but you can substitute with smoked cheddar.
