Chipotle Gouda Scalloped Sweet Potatoes

Creamy sweet potatoes baked with chipotle and smoky gouda cheese. A spicy twist on a classic side dish.

Ingredients

  • 2 lbs sweet potatoes, peeled and thinly sliced
  • 1 cup heavy cream
  • 1/2 cup milk
  • 2 chipotle peppers in adobo sauce, minced
  • 1 tsp adobo sauce
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups shredded gouda cheese
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a saucepan, combine heavy cream, milk, chipotle peppers, adobo sauce, garlic, salt, and pepper. Heat over medium heat until warm.
  3. Layer half the sweet potato slices in the baking dish. Pour half the cream mixture over them. Sprinkle with half the gouda cheese.
  4. Repeat with remaining sweet potatoes, cream mixture, and cheese.
  5. Cover with foil and bake for 40 minutes. Remove foil and bake for 20 more minutes until potatoes are tender and top is golden.
  6. Let cool for 5 minutes. Garnish with cilantro if desired.

Notes

  • You can adjust chipotle amount for more or less heat.
  • Use a mandoline for even slices.
  • Gouda melts well but you can substitute with smoked cheddar.
