  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup peeled and diced apple (about 1 medium apple)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  3. In a large bowl, mix pumpkin puree, oil, sugar, eggs, and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Do not overmix.
  5. Fold in the diced apple.
  6. Pour batter into prepared pan and spread evenly.
  7. Bake for 55-65 minutes, or until a toothpick inserted in center comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • You can use any variety of apple, such as Granny Smith or Fuji.
  • Store bread in an airtight container at room temperature for up to 3 days.
