  • 1 pound Brussels sprouts, trimmed and shaved
  • 1 large apple (Honeycrisp or Fuji), thinly sliced
  • 1/2 cup dried cranberries
  • 1/4 cup pecans or walnuts, chopped (optional)
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine shaved Brussels sprouts, apple slices, dried cranberries, and nuts.
  2. In a small bowl, whisk together olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper.
  3. Pour dressing over salad and toss until evenly coated.
  4. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
