A fresh and simple salad with quinoa, cranberries, and apple. Perfect for a light lunch or side dish.

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 large apple, diced
  • 1/2 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon maple syrup
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook quinoa with water in a pot. Bring to boil, then simmer for 15 minutes. Remove from heat and let stand for 5 minutes. Fluff with a fork.
  2. In a large bowl, combine cooked quinoa, diced apple, dried cranberries, and walnuts.
  3. In a small bowl, whisk olive oil, lemon juice, maple syrup, salt, and pepper.
  4. Pour dressing over salad. Toss gently to coat. Serve at room temperature or chilled.

Notes

  • You can swap walnuts for pecans or almonds.
  • Add fresh spinach or arugula for extra greens.
