1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup packed brown sugar
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup cold unsalted butter, cubed
1 large egg, beaten
2 cups fresh or frozen cranberries
1/4 cup orange juice
1/4 cup granulated sugar (for filling)
2 tablespoons cornstarch
1 teaspoon vanilla extract
1/2 cup rolled oats
1/4 cup chopped pecans (optional)
Instructions
Preheat your oven to 375°F (190°C). Line a 9×9-inch baking pan with parchment paper.
In a large bowl, whisk together flour, 1/2 cup sugar, brown sugar, baking powder, and salt.
Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Stir in the beaten egg until dough holds together.
Press half of the dough evenly into the bottom of the prepared pan. Set the remaining dough aside.
In a medium saucepan, combine cranberries, orange juice, 1/4 cup sugar, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens and the cranberries burst, about 5 minutes. Remove from heat and stir in vanilla.
Spread the cranberry filling over the crust in the pan.
To the reserved dough, add oats and pecans. Mix with your fingers until crumbly. Sprinkle this topping evenly over the cranberry layer.
Bake for 35 to 40 minutes, until the topping is golden brown and the filling is bubbly.
Cool completely in the pan on a wire rack before cutting into bars.
Notes
Store bars in an airtight container at room temperature for up to 3 days.
You can freeze the baked bars for up to 3 months. Thaw in the refrigerator before serving.
If using frozen cranberries, do not thaw them first.
