- 12 oz fresh or frozen cranberries
- 1 jalapeño, seeded and minced
- 1/2 cup chopped fresh cilantro
- 1/4 cup finely chopped red onion
- 1/4 cup fresh lime juice
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- Rinse cranberries and pick out any stems.
- Place cranberries in a food processor. Pulse until coarsely chopped.
- Add jalapeño, cilantro, red onion, lime juice, sugar, and salt.
- Pulse a few more times until combined. Do not puree.
- Transfer to a bowl. Refrigerate for at least 30 minutes before serving.
Notes
- Adjust sugar to taste depending on tartness of cranberries.
- Letting the salsa sit overnight improves the flavor.
