A fresh and tangy salsa made with cranberries, perfect for holiday appetizers or as a topping for meats.

Ingredients

  • 12 oz fresh or frozen cranberries
  • 1 jalapeño, seeded and minced
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup finely chopped red onion
  • 1/4 cup fresh lime juice
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt

Instructions

  1. Rinse cranberries and pick out any stems.
  2. Place cranberries in a food processor. Pulse until coarsely chopped.
  3. Add jalapeño, cilantro, red onion, lime juice, sugar, and salt.
  4. Pulse a few more times until combined. Do not puree.
  5. Transfer to a bowl. Refrigerate for at least 30 minutes before serving.

Notes

  • Adjust sugar to taste depending on tartness of cranberries.
  • Letting the salsa sit overnight improves the flavor.
