A creamy mac and cheese with tender broccoli florets. It is a comforting one-pot meal.

  • 8 oz elbow macaroni
  • 2 cups broccoli florets
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder

Instructions

  1. Cook macaroni according to package directions. Add broccoli during the last 3 minutes. Drain and set aside.
  2. In a large pot, melt butter over medium heat. Whisk in flour and cook for 1 minute.
  3. Gradually whisk in milk. Cook, stirring constantly, until thickened (about 3-4 minutes).
  4. Reduce heat to low. Add cheddar, Parmesan, salt, pepper, and garlic powder. Stir until cheese melts.
  5. Stir in macaroni and broccoli. Cook for 1 minute until heated through. Serve immediately.

  • Use sharp cheddar for a stronger cheese flavor.
  • Add a pinch of nutmeg for extra warmth.
  • For a crispy topping, broil with breadcrumbs for 2 minutes.
