  • 2 tablespoons butter
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup heavy cream
  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute.
  4. Sprinkle flour over vegetables. Stir and cook for 2 minutes.
  5. Slowly pour in chicken broth while stirring constantly.
  6. Add milk and heavy cream. Stir until smooth.
  7. Bring to a simmer. Add chicken, peas, thyme, salt, and pepper.
  8. Cook for 10 minutes, stirring occasionally.
  9. Taste and adjust seasoning. Serve hot.

Notes

  • Use leftover rotisserie chicken for convenience.
  • For a thicker soup, add more flour slurry.
  • Substitute milk with half-and-half for richer flavor.
