2 tablespoons butter
2 leeks, white and light green parts, sliced
2 cloves garlic, minced
1 can (15 ounces) butter beans, drained and rinsed
1 cup heavy cream
1/2 cup vegetable broth
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon fresh thyme leaves
Instructions
Melt the butter in a large skillet over medium heat.
Add the sliced leeks. Cook until soft, about 5 minutes.
Stir in the garlic. Cook for 1 minute until fragrant.
Add the butter beans, vegetable broth, and heavy cream.
Bring to a simmer. Reduce heat and cook for 10 minutes until the sauce thickens.
Stir in the salt, pepper, and thyme. Serve hot.
Notes
Use frozen leeks if fresh ones are not available.
Replace heavy cream with half-and-half for a lighter sauce.
