Creamy leek butter beans is a comforting side dish. Tender butter beans swim in a rich, creamy leek sauce. You can serve it as a main with crusty bread or as a side with grilled meat.

  • 2 leeks, white and light green parts, sliced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) butter beans, drained and rinsed
  • 1 cup heavy cream
  • 1/2 cup vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves

Instructions

  1. Melt the butter in a large skillet over medium heat.
  2. Add the sliced leeks. Cook until soft, about 5 minutes.
  3. Stir in the garlic. Cook for 1 minute until fragrant.
  4. Add the butter beans, vegetable broth, and heavy cream.
  5. Bring to a simmer. Reduce heat and cook for 10 minutes until the sauce thickens.
  6. Stir in the salt, pepper, and thyme. Serve hot.

Notes

  • Use frozen leeks if fresh ones are not available.
  • Replace heavy cream with half-and-half for a lighter sauce.
  • Add extra broth if you prefer a thinner sauce.
