- 12 oz pasta (penne or fettuccine)
- 1 cup pumpkin puree
- 1/2 cup heavy cream
- 3 cloves garlic, minced
- 1/2 onion, diced
- 1/2 cup grated Parmesan cheese
- 1 tablespoon fresh sage, chopped
- 2 tablespoons butter
- Salt and pepper to taste
- 1/4 teaspoon nutmeg
- Cook the pasta according to package directions. Drain and set aside.
- In a large skillet, melt butter over medium heat. Sauté onion and garlic until soft, about 3 minutes.
- Add pumpkin puree, heavy cream, sage, nutmeg, salt, and pepper. Stir and simmer for 5 minutes.
- Toss the cooked pasta with the sauce and Parmesan cheese. Serve hot.
