This one-pan meal combines seared salmon with orzo pasta in a creamy sun-dried tomato sauce. It’s rich, flavorful, and ready in under 40 minutes.

Ingredients

Scale
  • 4 salmon fillets (about 6 oz each)
  • 1 cup orzo pasta
  • 1/2 cup chopped sun-dried tomatoes (packed in oil, drained)
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Season salmon with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear salmon for 3-4 minutes per side. Remove and set aside.
  4. In the same skillet, sauté garlic and sun-dried tomatoes for 1 minute.
  5. Add orzo, chicken broth, and heavy cream. Stir and bring to a simmer.
  6. Reduce heat to medium-low. Cook orzo for 10-12 minutes, stirring occasionally, until tender.
  7. Return salmon to the skillet. Spoon sauce over fillets.
  8. Sprinkle with Parmesan. Cook 2 more minutes.
  9. Garnish with basil. Serve immediately.

Notes

  • You can substitute half-and-half for heavy cream for a lighter sauce.
  • Add spinach in the last 2 minutes of cooking for extra greens.
