A refreshing Italian pasta salad with a mix of vegetables, cheese, and a tangy dressing.

Ingredients

  • 8 oz pasta (penne or rotini)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/2 cup red onion, diced
  • 1/2 cup cucumber, diced
  • 1/2 cup bell pepper, diced
  • 1/2 cup mozzarella cheese, cubed
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Cook pasta according to package instructions, then rinse under cold water.
  2. In a large bowl, combine tomatoes, olives, onion, cucumber, bell pepper, mozzarella, and basil.
  3. Add cooled pasta to the bowl.
  4. In a small bowl, whisk olive oil, vinegar, oregano, salt, and pepper.
  5. Pour dressing over the salad and toss to coat.
  6. Chill for at least 30 minutes before serving.

Notes

  • Store leftovers in the refrigerator for up to 3 days.
