A quick and healthy skillet meal with ground meat and cabbage. It captures the flavors of an egg roll without the wrapper.

Ingredients

  • 1 pound ground pork or turkey
  • 1 tablespoon sesame oil
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 bag (14 ounces) coleslaw mix or shredded cabbage
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha (optional)
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Heat sesame oil in a large skillet over medium-high heat.
  2. Add ground meat. Cook and crumble until browned, about 5 minutes.
  3. Stir in onion, garlic, and ginger. Cook 2 minutes.
  4. Add coleslaw mix. Cook 4 to 5 minutes until wilted.
  5. Pour in soy sauce, rice vinegar, and sriracha. Stir well.
  6. Cook 1 more minute. Remove from heat.
  7. Top with green onions and sesame seeds. Serve hot.

Notes

  • You can use ground chicken or beef instead of pork.
  • Add shredded carrots or bell peppers for extra crunch.
  • Serve over rice or cauliflower rice for a full meal.
