1 pound pasta (penne or rigatoni)
2 cups pumpkin, peeled and cubed
1 block (8 oz) feta cheese
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup cherry tomatoes, halved
1/4 cup fresh basil, chopped
1/2 cup vegetable broth
Instructions
Preheat your oven to 400°F (200°C).
Toss pumpkin cubes with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet. Roast for 20 minutes.
Cook pasta according to package directions. Drain and set aside.
In a baking dish, combine roasted pumpkin, minced garlic, oregano, and cherry tomatoes. Place the feta block in the center. Drizzle with remaining olive oil and vegetable broth.
Bake for 15 minutes until feta is soft and tomatoes blister.
Remove from oven. Stir everything together, mashing the feta into a creamy sauce.
Add the cooked pasta and toss to coat. Sprinkle with fresh basil. Serve warm.
Notes
You can use canned pumpkin puree instead of fresh pumpkin. Reduce roasting time to 10 minutes.
