A simple French apple cake with tender apples and a light batter.

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a small bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla.
  5. Gradually mix in the flour mixture until just combined.
  6. Fold in the apple slices gently.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 35-40 minutes, until a toothpick inserted in center comes out clean.
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack.
