This casserole combines creamy potatoes with the rich flavor of French onion soup. It is a popular side dish for potlucks and holiday meals.

  • 1 (30 oz) package frozen shredded hash browns, thawed
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 cup sour cream
  • 1 cup French onion dip
  • 2 cups shredded cheddar cheese
  • 1 can (6 oz) French fried onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the thawed hash browns, cream of mushroom soup, sour cream, French onion dip, and 1 cup of the shredded cheese.
  3. Season with salt and pepper.
  4. Transfer the mixture to a greased 9×13 inch baking dish.
  5. Bake for 40 minutes.
  6. Remove from the oven, top with the remaining 1 cup of cheese and the French fried onions.
  7. Return to the oven and bake for another 5 to 10 minutes, until the cheese is melted and the onions are golden.
  8. Let it cool for 5 minutes before serving.

Notes

  • You can substitute cream of chicken soup for a different flavor.
  • To make ahead, assemble the casserole without the top cheese and onions. Refrigerate, then add toppings before baking.
  • Leftovers can be stored in the fridge for up to 3 days.
