This French Onion Soup features caramelized onions in a rich broth, topped with melted cheese and crusty bread. No alcohol, bacon, or ham is used.

Ingredients

  • 4 large yellow onions, thinly sliced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 6 cups beef or vegetable broth
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 4 slices French bread
  • 1 cup grated Gruyere or Swiss cheese

Instructions

  1. Melt butter and olive oil in a large pot over medium heat.
  2. Add sliced onions and sugar. Cook, stirring often, for 25 to 30 minutes until deep golden brown.
  3. Stir in broth and thyme. Bring to a boil, then reduce heat and simmer for 15 minutes. Season with salt and pepper.
  4. Preheat your broiler. Ladle soup into oven-safe bowls. Top each with a slice of bread and a generous amount of cheese.
  5. Broil for 2 to 3 minutes until cheese is bubbly and golden. Serve hot.

  • For a vegetarian version, use vegetable broth.
