- 1 cup pumpkin puree
- 2 ripe bananas, mashed
- 1/2 cup coconut sugar
- 1/4 cup maple syrup
- 2 eggs
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 1/2 cups gluten-free flour blend
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- Preheat oven to 350°F. Grease a 9×5 inch loaf pan.
- In a large bowl, mix pumpkin, bananas, coconut sugar, maple syrup, eggs, coconut oil, and vanilla.
- In another bowl, whisk together gluten-free flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Add dry ingredients to wet ingredients. Stir until just combined.
- Pour batter into prepared pan. Smooth the top.
- Bake for 50-55 minutes, until a toothpick inserted in center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
