  • 2 ripe bananas, mashed
  • 1/2 cup coconut sugar
  • 1/4 cup maple syrup
  • 2 eggs
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups gluten-free flour blend
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F. Grease a 9×5 inch loaf pan.
  2. In a large bowl, mix pumpkin, bananas, coconut sugar, maple syrup, eggs, coconut oil, and vanilla.
  3. In another bowl, whisk together gluten-free flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Add dry ingredients to wet ingredients. Stir until just combined.
  5. Pour batter into prepared pan. Smooth the top.
  6. Bake for 50-55 minutes, until a toothpick inserted in center comes out clean.
  7. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
