These gluten-free pumpkin truffles are a sweet treat for fall. They combine pumpkin puree with creamy filling and a chocolate coating.

Ingredients

  • 1/2 cup pumpkin puree
  • 1/4 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1 cup gluten-free chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Mix pumpkin puree, cream cheese, powdered sugar, pumpkin pie spice, and vanilla extract in a bowl until smooth.
  2. Chill the mixture in the refrigerator for 1 hour.
  3. Scoop small portions and roll into balls. Place on a parchment-lined tray.
  4. Freeze the balls for 30 minutes.
  5. Melt chocolate chips and coconut oil together in a microwave-safe bowl. Stir until smooth.
  6. Dip each frozen ball into the melted chocolate. Return to the tray.
  7. Refrigerate the truffles until the chocolate sets, about 20 minutes.

Notes

  • Store truffles in an airtight container in the refrigerator for up to 1 week.
  • For a vegan version, use dairy-free cream cheese and chocolate.
