- 1/2 cup pumpkin puree
- 1/4 cup cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
- 1 cup gluten-free chocolate chips
- 1 tablespoon coconut oil
- Mix pumpkin puree, cream cheese, powdered sugar, pumpkin pie spice, and vanilla extract in a bowl until smooth.
- Chill the mixture in the refrigerator for 1 hour.
- Scoop small portions and roll into balls. Place on a parchment-lined tray.
- Freeze the balls for 30 minutes.
- Melt chocolate chips and coconut oil together in a microwave-safe bowl. Stir until smooth.
- Dip each frozen ball into the melted chocolate. Return to the tray.
- Refrigerate the truffles until the chocolate sets, about 20 minutes.
