Green Crispy Potato Salad

A fresh and crunchy potato salad with green vegetables and a tangy dressing. No bacon or ham.

Ingredients

  • 4 medium potatoes, cubed
  • 1 cup green beans, trimmed and halved
  • 1/2 cup frozen peas, thawed
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Place potatoes in a pot and cover with salted water. Bring to a boil and cook until tender, about 10 to 12 minutes. Drain and let cool.
  2. Bring a separate pot of water to a boil. Add green beans and cook for 2 minutes. Drain and rinse under cold water.
  3. In a large bowl, combine cooled potatoes, green beans, peas, and parsley.
  4. In a small bowl, whisk together olive oil, lemon juice, mustard, salt, and pepper. Pour over the salad and toss gently.
  5. Refrigerate for at least 30 minutes before serving. Serve cold.

Notes

  • For extra crunch, add chopped celery or cucumber.
  • Adjust lemon juice and mustard to your taste.
  • This salad keeps well in the fridge for up to 2 days.
