Ingredients

  • 4 boneless skinless chicken thighs
  • 1 cup pineapple chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 red onion, sliced
  • 3 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1 teaspoon minced garlic
  • 1 teaspoon ground ginger

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together soy sauce, olive oil, brown sugar, garlic, and ginger.
  3. Place chicken thighs on the baking sheet. Arrange pineapple, bell peppers, and red onion around the chicken.
  4. Pour the sauce over the chicken and vegetables. Toss to coat evenly.
  5. Bake for 25-30 minutes until chicken is cooked through and vegetables are tender.
  6. Serve hot.
