1 cup pumpkin puree
1/4 cup coconut oil, melted
1/2 cup coconut sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon pumpkin pie spice
1/2 cup dark chocolate chips
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, mix pumpkin puree, melted coconut oil, coconut sugar, egg, and vanilla extract until smooth.
In a separate bowl, whisk together whole wheat flour, baking soda, salt, and pumpkin pie spice.
Add the dry ingredients to the wet ingredients. Stir until just combined.
Fold in the dark chocolate chips.
Drop spoonfuls of dough onto the prepared baking sheet. Flatten slightly with the back of a spoon.
Bake for 10 to 12 minutes, until edges are set.
Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Use canned pumpkin puree, not pumpkin pie filling.
For extra chewiness, chill the dough for 30 minutes before baking.
Store cookies in an airtight container at room temperature for up to 5 days.
