  • 1 3/4 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1 cup pumpkin puree
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk (any kind)
  • For the glaze: 1/2 cup powdered sugar, 2 tablespoons maple syrup, 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  3. In another bowl, mix pumpkin puree, maple syrup, melted coconut oil, eggs, vanilla, and milk until smooth.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix.
  5. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  6. Bake for 18-22 minutes, until a toothpick inserted in the center comes out clean.
  7. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. For the glaze: whisk powdered sugar, maple syrup, and cinnamon until smooth. Drizzle over cooled muffins.

Notes

  • You can use all-purpose flour instead of whole wheat.
  • Store muffins in an airtight container at room temperature for up to 3 days.
  • The glaze sets in about 10 minutes.
