1 cup pumpkin puree
1 cup rolled oats
1/2 cup almond flour
1/4 cup maple syrup
1 teaspoon pumpkin pie spice
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup dark chocolate chips (optional)
Instructions
Preheat your oven to 350 degrees Fahrenheit.
Line a baking sheet with parchment paper.
In a large bowl, mix pumpkin puree, maple syrup, and pumpkin pie spice.
Add rolled oats, almond flour, baking soda, and salt. Stir until combined.
Fold in chocolate chips if using.
Scoop dough onto the baking sheet. Flatten each cookie slightly.
Bake for 12 to 15 minutes. Cookies should be firm around the edges.
Cool on the baking sheet for 5 minutes. Then transfer to a wire rack.
Notes
Store cookies in an airtight container for up to 5 days.
You can substitute almond flour with oat flour.
