- 1 cup rolled oats
- 1 scoop vanilla protein powder
- 1 teaspoon baking powder
- 1/2 teaspoon pumpkin pie spice
- 1/2 cup pumpkin puree
- 2 large eggs
- 1/2 cup milk (or non-dairy milk)
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
- Blend oats into a flour in a blender or food processor.
- Mix oat flour, protein powder, baking powder, and pumpkin pie spice in a bowl.
- In another bowl, whisk pumpkin puree, eggs, milk, maple syrup, and vanilla.
- Pour wet ingredients into dry ingredients. Stir until just combined.
- Heat a non-stick pan over medium heat. Lightly grease with oil or butter.
- Pour 1/4 cup batter per pancake. Cook until bubbles form on top. Flip and cook 1-2 minutes.
- Serve warm with your favorite toppings.

- You can use gluten-free oats if needed.
