Healthy Pumpkin Spinach Lasagna

A healthy twist on classic lasagna using pumpkin puree and spinach. Perfect for a comforting meal.

Ingredients

  • 9 lasagna noodles
  • 2 cups pumpkin puree
  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup low-sodium vegetable broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook lasagna noodles according to package directions. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onion and garlic. Cook until soft, about 3 minutes.
  4. Add spinach and cook until wilted, about 2 minutes. Remove from heat.
  5. In a bowl, mix pumpkin puree, vegetable broth, oregano, salt, and pepper.
  6. In another bowl, combine ricotta cheese with half the Parmesan.
  7. Spread a thin layer of pumpkin sauce on the bottom of a 9×13 inch baking dish.
  8. Layer 3 noodles, then half the ricotta mixture, half the spinach mixture, and one-third of the pumpkin sauce. Repeat layers.
  9. Top with remaining noodles, pumpkin sauce, mozzarella, and remaining Parmesan.
  10. Cover with foil and bake for 30 minutes. Remove foil and bake for another 15 minutes until bubbly and golden.
  11. Let rest for 10 minutes before serving.

Notes

  • Use no-boil lasagna noodles to save time. Adjust liquid slightly.
  • Substitute kale for spinach if desired.
  • Add cooked ground turkey for extra protein.
